It’s a rainy cool lazy Saturday. After finishing my cleaning for the day I am going to relax and work on a new hobby I am trying for the winter months, painting. Well I am going to start with a paint by numbers and see how I do with that. I’m also thinking about trying my hand in crocheting this winter. Fingers crossed that I can make some good things.
I will play some music and have some tea. Makes for a very cozy feel. Oh and my puppy will be cuddled up next to me. I should point out that I call him a puppy but he is actually 12 ½ years old but he is always a puppy to me.
My plan for dinner (I am home by myself today) is just for a plain old grilled cheese with some homemade chicken noodle soup. Grilled cheese is so easy and so good on chilly day. And I don’t’ know about you but I don’t’ think you can ever go wrong with a good bowl of chicken noodle soup.
So today I am going to cheat a little and just use rotisserie chicken for the soup. I’m going to use chicken broth, rotisserie chicken, celery, carrots, basil, oregano, pepper and garlic. Oh and of course Egg noodles. This is a quick easy way to make chicken noodle soup.
Take a look below for my recipe (I’m sure not too different from other recipes you have seen-but it is the way I like to make it when I don’t want to spend a whole lot of time cooking)
1 teaspoon olive oil
1/2 cup onion
1 cup chopped celery
1 cup chopped carrots
28 oz. chicken broth
2 cups of shredded chicken
½ teaspoon basil
½ teaspoon oregano
½ teaspoon black pepper
1/4 teaspoon garlic powder
1 ½ cups egg noodles
In a large pot cook celery and carrots in the olive oil for 5 mins until tender. Add in the chicken broth, shredded chicken and spices. Bring to a boil and then reduce heat and simmer for 20 min. Then add noodles and continue to simmer for another 10 min or until noodles are done.
